Ricotta Cheese Pie

For bottom crust:
2 cups flour
½ cup sugar
1 ¾ teaspoons baking powder
Pinch of Allspice
½ cup butter
2 egg yolks
2 tablespoons milk
1 teaspoon vanilla

Combine flour, spice, sugar and baking powder. Cut in butter until crumbly. Stir in egg yolk, milk and vanilla. Knead dough slightly to form a ball. Roll 2/3 dough out to fit into a 9" round pie pan.

For filling:
3 cups ricotta cheese
1 egg yolk + 1 whole egg + 2 egg whites
1/2 cup sugar
Pinch of Allspice

Stir together by hand, ricotta, egg, spice and sugar. Pour into pie shell and smooth the top.

For top crust:
1 egg yolk
1 teaspoon milk

Combine all filling ingredients, mix well, and pour into prepared bottom crust. 
Roll out remaining 1/3 dough and lay over filling.  Brush with glaze mixture of egg yolk and milk.
Bake at 350°F for 35 to 45 minutes or until knife inserted off center comes out clean.
